Camino is the vision of Chef Javier, shaped by his Murcian roots and years in some of Europe’s most respected kitchens.
Javier Cortés was born and raised in Murcia, where food was always at the centre of family life. Inspired by the region’s markets and Mediterranean traditions, he pursued a career in the kitchen that took him across Spain and into some of Europe’s most respected restaurants.
After years of experience and refinement, Javier returned home to create Camino, a place that brings together the flavours of Murcia with the techniques he mastered abroad. His cooking reflects a belief in simplicity, balance, and honesty, transforming seasonal produce into dishes that feel both rooted and modern.
